Strawberry Salad Recipe

Strawberry+Salad+Recipe

While the days are turning colder, shorter, and bleaker, that doesn’t mean our food has to do the same. In this recipe, we will be making a salad that tastes like a ray of sunshine poking through fluffy white clouds on a crisp day. This salad features strawberries, red onions and feta cheese drizzled with poppyseed dressing. Get cozy and dive into this deliciously bright salad!

 

INGREDIENTS (Serves 2):

  • ¼ cup of cherry tomatoes
  • 1 mini cucumber
  • ¼ red onion
  • 15 grams of crumbled feta cheese
  • 2.5 ounces of any green salad (I used s spring mix from Trader Joe’s)
  • 5 strawberries
  • poppyseed dressing

 

DIRECTIONS:

  1. Peel and finely cube red onions, then soak in a bowl of water with ice cubes
  2. Wash and cut all vegetables thoroughly
    1. Cut the strawberries into quarters
    2. Cut the cherry tomatoes lengthwise
    3. Cut the cucumbers into coins, then cut the coins into semi-circles
  3. Add salad greens, strawberries, cucumber, red onion and cherry tomatoes to a large bowl. Finally pour poppyseed dressing and mix well so that dressing and vegetables are incorporated evenly throughout all portions of the salad. Add more dressing if needed and sprinkle in crumbled feta cheese
  4. Serve and enjoy!
