Breakfast Potato Recipe

Breakfast+Potato+Recipe

Potatoes are perhaps the most versatile food item. They are able to take on a multitude of forms, like french fries, hashbrowns and chips. They are used in soups, salads, and sandwiches. Potatoes can be a main meal, side dish, appetizer, or even desert. They can be cooked and prepared in many ways, such as mashed, roasted and baked. But arguably the best form of potato is the breakfast potato. Breakfast potatoes are simple and easy to make, although they have the potential to be dressed up. This specific recipe calls for 4 ingredients.

INGREDIENTS (Serves 2):

  • 2 medium russet potatoes
  • 1 large yellow onion
  • everyday bagel seasoning (I get this one from Trader Joe’s)
  • oil (olive, grapeseed, avocado)

INSTRUCTIONS:

  1. Dice potatoes and onions. Try to dice the potatoes in a smaller size for quicker cooking. The onions do not need to be chopped incredibly finely and will taste better with larger chunks.
  2. Heat a generous drizzle of oil on medium-high heat in a medium-large pan
  3. Add potatoes and onions. Spread the potatoes out so they cover the area of the pan. Stir occasionally and cook for around 10 minutes, or until potatoes are slightly softened and no longer crunchy.
  4. Remove pan from heat and serve with everyday bagel seasoning sprinkled on top.
  5. Enjoy!
