Sookie St. James’ Peach Sauce – Gilmore Girls

Ingredients:

  • 7 ripe peaches
  • ½ cup of white granulated sugar
  • ¼ cup of maple syrup
  • 2 tbsp of fresh lemon juice
  • 1/4 cup water
  • 1 tsp cinnamon

Directions:

  1. Fill a large saucepan halfway with water and place over high heat
  2. Cut peaches in half and remove pits while you wait for the water to boil
  3. When the water begins to boil, place the peaches in the water and reduce the heat to low to let it simmer for 20 minutes
  4. Drain the water and wait for the peaches to cool
  5. Once the peaches are cool, cut them into small chunks and I would recommend peeling the peaches before you blend them to make the sauce more smooth in the end
  6. Place the peaches in a blender and blend until smooth
  7. Pour the peach puree back into the saucepan and return to low heat
  8. Add the sugar, maple syrup, lemon juice, water, and cinnamon to the sauce and stir
