In a season of cold weather, many people are being overcome with sickness. What better way to help with sickness than a nice warm bowl of soup? There are many soups out there such as chicken noodle soup, broccoli cheddar, corn chowder…. But my personal favorite is a simple tomato soup. The perfect blend of slight sourness compliments the natural sweetness of a tomato. Here is an easy recipe with a small amount of ingredients.
Ingredients:
- Chicken broth
- Canned tomatoes
- Butter
- Onions
- Garlic
Steps:
- Cook the onions in the butter until they are soft. Try to avoid too much browning.
- Add chopped garlic and cook for around 30 seconds.
- Add the canned crushed tomatoes and juice.
- Add the vegetable broth and mix everything together.
- Let it simmer and then cook uncovered for half an hour.
- Use a blender afterwards if it’s too chunky.
