Bell Pepper Pastry Recipe

Bell+Pepper+Pastry+Recipe

With school starting every morning at the ripe hour of 7:30AM, many high schoolers find themselves eating a wimpy breakfast or skipping it altogether. This is absolutely unacceptable because breakfast is the most important meal of the day. The following recipe takes less than 20 minutes and can take as little as 10 minutes if you pre-prepare ingredients the night before. While I may be biased, this recipe makes for such a delicious meal and is sure to fuel you with positive energy for the day!

 

INGREDIENTS (Serves 4):

  • 1 tablespoon of unsalted butter
  • ½ red bell pepper, chopped finely
  • ½ red onion, chopped finely
  • shredded cheddar cheese
  • seasoning: salt, black pepper, parsley flakes, oregano, garlic powder
  • 1 egg
  • 2 sheets of puff pastry (I used this one from Pepperidge Farm)

 

DIRECTIONS:

  1. Preheat oven to 400 degrees Fahrenheit
  2. In a bowl, completely melt butter (I like to microwave it for around 30 seconds)
  3. Stir in chopped red bell pepper, red onion, and cheese. Mix
  4. Crack an egg over the mixture, sprinkle in seasonings and stir mixture until all portions are well incorporated and evenly distributed
  5. Using a spoon, small spatula, or knife spread mixture onto 1 sheet of puff pastry. Leave around 1.5 inches on the left, right, and bottom margin. On the top margin, leave 2.5 inches of space. Now roll the puff pastry lengthwise, starting at the bottom. Wrap as tightly as possible, but be careful of liquid spewing out
  6. Cut the roll into circles of a 1 inch width
  7. Repeat step 5-6 for another sheet of puff pastry
  8. Bake at 400 degrees for 7 minutes, or until pastry is golden brown and flaky
  9. Let cool, serve and enjoy!
